„Should We Include Environmental Costs in Food Pricing? Evidence from a Field Experiment in the Netherlands.“

“Food supply chains are a major driver of climate change, responsible for around 26% of global greenhouse gas emissions from human activities (Poore & Nemecek, 2018). Yet, with few exceptions, agriculture is still largely excluded from direct carbon pricing instruments such as emissions trading schemes or targeted carbon taxes. In this regulatory gap, a central question emerges: can consumer demand be steered towards lower-emission choices through behavioral nudges, and if so, are such nudges sufficient, or do we ultimately need mandatory instruments like carbon taxes?

 In this lecture , Krauss will discuss the role of the agri-food system in climate change and share her findings from a three-month field experiment in two university cafeterias in the Netherlands, in which the environmental costs of food items were calculated and added to the original prices displayed to consumers.”

Tabea Krauss is a final-year PhD candidate in Law & Economics, completing a joint doctoral programme at Erasmus University Rotterdam, the University of Hamburg, and the University of Bologna. Her research examines how green consumption and eco-labels impact consumer behaviour, with a focus on experimental methods and natural language processing. Her work further addresses the concepts of climate-neutrality and impure public goods.
