Ensuring the welfare of fish in aquaculture, fisheries, and research is both an ethical responsibility and a practical necessity. This lecture explores how an ecophysiological approach can inform and improve our assessment of fish welfare, from captivity through to slaughter. By integrating behavioural observations with physiological and neurophysiological indicators, we gain a more comprehensive understanding of how fish experience their environment and how they respond to stressors, including stunning and killing methods. Special emphasis will be placed on evaluating the humaneness of slaughter techniques, using cutting-edge tools to detect the state of sensibility in fish during this process. Improving fish welfare is not only the right thing to do—it is essential for the long-term sustainability, reputation, and resilience of fisheries and aquaculture industries.
